Linguine with White Clam Sauce

Linguine with White Clam Sauce is one of Sean's favorite pasta dishes, so we had to try it in the Instant Pot. This version is super easy and comes out with so much rich, flavorful, garlicky deliciousness. We adjusted the original recipe a little bit to make enough for our family of 4. The kids (and us) slurped it all up and there were no leftovers - Success!

INGREDIENTS

  • 4 tbsp (or ½ stick) of butter
  • ¼ cup olive oil
  • 1 tbsp lemon juice
  • 1 shallot, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • ¼ cup dry white wine (we used Chardonnay)
  • 2 - 6½ oz cans of chopped clams with their juices (You will need to separate juices from clams with a bowl and strainer)
  • 1 tspn dried oregano
  • 1 tspn dried basil
  • 1 tspn dried parsley flakes
  • 1 tspn Old Bay Seasoning
  • ½ tspn black pepper
  • 1 - 16 oz box of dried linguine pasta
  • ¼ cup grated parmesan cheese, plus more if desired

INSTRUCTIONS

  1. Put the butter and oil in the Instant Pot and press "Sauté" setting and adjust to "More." Melt the butter, and add the shallot and garlic. Cook for 1-2 minutes
  2. Pour yourself a glass of white wine, add some wine to the Instant Pot and let simmer for 1 minute more
  3. Add the lemon juice, chicken broth, and clam juice (but NOT the clams), basil, oregano, parsley, Old Bay, pepper and stir together well
  4. Break the linguine pasta in half and lay it on top, pushing it down into the liquid but not stirring. Make sure all the pasta is covered in the liquid
  5. Secure the lid and hit “Pressure Cook” High Pressure for 6 minutes. Quick release when done
  6. Add the clams and stir until they get heated through. Add the Parmesan and give it another quick stir
  7. Serve with the rest of the bottle of wine and enjoy!
