Super Easy Chicken Masala Curry

In response to all the positive feedback we've been getting for our "dump&go" recipes like the Chicken Verde and Super Easy Pasta & Meatballs, we've added a new recipe for the busy, busy Kimstapot peeps! Here's an Indian-influenced Chicken Masala Curry that's absolutely delicious. I'll caveat that last sentence with, don't expect this to match up to authentic recipes or masala from a restaurant. But! If you're like us... busy and in need of your Indian food fix that the kids will eat, you have to try this.

INGREDIENTS

  • 15 oz jar of a masala simmer sauce. We used the Trader Joe's Masala Simmer Sauce
  • 1 - 1½ lbs of chicken thighs
  • 6 small yellow potatoes
  • 1 cup of frozen peas
  • ¼ jar of water
  • Olive oil

INSTRUCTIONS

  1. Rinse and dry chicken thighs, then cut chicken into 1" cubes. Cut each potato into 1" cubes
  2. Add enough olive oil to lightly coat the bottom of the Instant Pot, then press the "Sauté" setting. Adjust to "More." When hot, add the cut chicken thighs and sauté for 2-3 minutes or, as needed, to give them a light brown coat
  3. Deglaze the bottom of the pot with a wooden spoon, then add cut potatoes and jar of masala simmer sauce on top of the chicken 
  4. Fill the empty jar with a quarter to a third full of water, put the lid on and give it a couple of good shakes to rinse the rest of the sauce from the jar and lid, remove lid, then pour into the Instant Pot
  5. Add the frozen peas on top of the sauce
  6. Secure the lid and hit “Pressure Cook” High Pressure for 15 minutes. Quick release when done
  7. Mix your Chicken Masala Curry then serve with your choice of basmati rice and/or naan!

NOTES

  • The Trader Joe's Masala Simmer Sauce does have an ever-so-slight amount of heat to it. However, our 6yo and 3yo didn't mind it at all and neither were asking for water or milk to calm the heat
  • Next time we're going to try adding some cut cauliflower
