Chicken Verde
This might be the easiest meal you can make in your Instant Pot. This recipe was passed to us by a friend and it's by far one of our favorites, kids included.
The original recipe by Cookies & Cups uses chicken breast and can be found here. It's absolutely delicious as-is. However, if you're craving or prefer using dark meat, here's our updated version for the Instant Pot 6QT Duo Plus.
INGREDIENTS
- 2.5lbs of boneless skinless chicken thighs*
- 1 tspn cumin
- 1 tspn smoked paprika
- 1 tspn kosher salt
- 1 16oz jar of salsa verde **
INSTRUCTIONS
- Add all ingredients into the Instant Pot
- Close the lid, making sure the release valve is set to Sealing
- Manual (Pressure Cook) on High for 15 minutes
- When the timer goes off, quick release until the pin (float valve) drops
- Stir, shred the meat with 2 forks, and serve over jasmine rice
Enjoy with a nice glass of wine and wait for the "yum" praises to come in. This is sure to become part of your weekly rotation of recipes.
* Note: We always.... always... always buy and recommend buying high quality ingredients, especially when it comes to meat. We've found that chicken from some brands like Tyson, for whatever reason, tends to be mushy.
** Note: We love the Salsa Verde from Trader Joe's. They come in 12oz jars so be sure to buy a couple of jars and use the remainder for tortilla chips.
