Easy Japanese Curry

We LOVE recipes that are super EASY, use only a few ingredients, FAST to prepare and TASTY too. We're excited to find this ridiculously easy Japanese Curry recipe that fits all the criteria and so yummy that even the pickiest kids will gobble it up!

The original recipe is here, but we made it our own with a few small tweaks to simplify it even more:

INGREDIENTS

  • 1½ - 2 lbs chicken (we used thighs)
  • 2 carrots
  • 2 potatoes
  • 2 yellow onions
  • 1 tspn minced garlic
  • 1 tspn minced ginger
  • 1 (8.4 oz. size) box of Japanese curry roux (we used S&B Golden Curry Sauce Mix)
  • 3 cups of chicken broth
  • 1 tbsp ketchup
  • 1 tbsp soy sauce

INSTRUCTIONS

  1. Chop the veggies and dice the chicken into 1" chunks
  2. Time to create the aromatics. Press the Sauté button on the Instant Pot. When hot, add about 1 tbsp of oil to coat the bottom, then add the onions, garlic, and ginger. Sauté until the onions are softened
  3. Add the chicken and stir to mix with the aromatics
  4. Mix in the carrots and potatoes. Whew, that was hard work- pour a glass of wine for yourself!
  5. Pour in the chicken broth, scrape the bottom of the pot with a wooden spoon to remove anything sticking (this is known as deglazing)
  6. Add the curry roux on top (DO NOT MIX)
  7. Cover and seal the Instant Pot lid
  8. Press the Meat/Stew button and set time for 15 minutes, then quick release when done
  9. Remove lid, add the ketchup and soy sauce, and mix well
  10. Serve with rice
