Homemade Orange Marmalade

We have a very prolific fruit-producing orange tree in our backyard. So when we found a way to use up some the oranges in the Instant Pot, we had to try - and it turned out delicious! There are only two ingredients and only takes about an hour total to make. This Orange Marmalade is sooo good on toast. Also, we discovered that adding a spoonful into a cup of hot water makes a incredible, vitamin-packed delicious tea. Very similar to the Korean Citron Tea!

    INGREDIENTS

    • 1½ lbs of oranges (or about 6-7 oranges)
    • 1 lbs organic raw sugar*
    • 1 cup water

    1. Slice the oranges very, very thin, about 1/8- 1/4 inch
    2. Line the bottom of the Instant Pot with layers of orange slices, then add the water
    3. Seal the lid and Manual pressure cook on High for 10 minutes, natural release for 10 minutes, then release the rest
    4. Add the sugar and switch the Instant Pot to Sauté mode. As you sauté on high, mix  well until the sugar is dissolved. Keep mixing to reduce some of the liquid until you get a nice "jam" consistency
    5. Allow marmalade to cool and spoon into sterilized** mason jars or other airtight containers.

    * Feel free to use whatever sugar you prefer, but adjust the amount of sugar you use based on the sweetness. We used 1lbs of organic raw sugar since we find it less sweet than granulated sugar

    ** To sterilize, add mason jars, lids, and scooping spoon into a large pot of cool water, then boil for 5 minutes. Allow to cool before handling
